The Haitian culture is rich in history and tastes of freedom. We want to celebrate this Christmas season and New Year with our friends in Haiti by sharing a recipe with you. We hope it becomes more than simply a delightful dish in your home year after year, but a reminder of our beloved friends in Haiti!

Haitian slaves were not allowed to have this delectable pumpkin soup, a favorite of French slave masters. When they finally gained their freedom on Sunday, January 1, 1804, they celebrated with lively music and delicious food in the Place d’Armes, in the city of Gonaives. And what better way to celebrate than to eat the very thing they were powerless to eat as slaves? Nowadays it doesn’t matter where in the world a Haitian person might be on January 1 - they will be having the soup of freedom!
